Salad of smoked potato with North Sea crab and crab oil

Made from the Opperdoezer Ronde potato.

Ingredients

Smoke oil
Brander mayonnaise
Salt and pepper
Spring onion
crab oil
Opperdoezer Ronde
citrus vinaigrette
crab meat
micro leaf

Preparation

  1. Cook the Opperdoezer Ronde potatoes in their skins until done and chill. Peel the potato and cut into brunoise.
  2. Add crab meat and season with a few drops of smoked oil, Brander mayonnaise, salt, and pepper.
  3. Add sliced spring onion to taste and arrange in the center of the plate.
  4. Dress the micro leaf salad with citrus vinaigrette and arrange it around the crab and potato salad.
  5. Place a few more pieces of crab meat on top of the salad.
  6. Spoon a little crab oil between the salad and the micro leaves.
