Salted caramel meringues

Ingredients

4Egg whites
3cocoa powder
220gSugar
1Apple cider vinegar
2Vanilla extract

3Water
60mlWhipped cream
50gFine sugar
30gUnsalted butter
0.25teaspoon red pepper flakes

Preparation

  1. Start by making the salted caramel sauce. In a tall, heavy-bottomed pan, caramelize the sugar and 3 tbsp water.
  2. While stirring with a whisk, add the cream. Then add the butter and stir well. Let the sauce cool down. Then stir the salt into the caramel sauce.
  3. Preheat the oven to 130°C.
  4. Start making the meringues. Separate the egg yolks from the egg whites. Put the egg whites in a grease-free bowl.
  5. Beat the egg whites until stiff with a mixer.
  6. Add the sugar spoon by spoon on medium speed. Once all the sugar is added, mix on the highest speed for 6 minutes.
  7. Add the apple cider vinegar and mix for another 2 minutes on the highest speed. Then mix the vanilla extract into the egg whites for 1 more minute.
  8. Line a baking tray with parchment paper. Scoop 6 mounds onto the paper with a little space in between. Sprinkle the meringues with cocoa powder and drop 0.5 teaspoon of sauce on each meringue.
  9. Put the meringues in the oven and turn the oven down to 120°C. Bake for 30 minutes. Turn off the oven and leave them in for another 30 minutes.
