‘Sandwich’ of prawn carpaccio and nori

This ‘sandwich’ consists of, among other things, prawn carpaccio, nori, mayonnaise with blood orange, and mizuna lettuce.With this range of various fish carpaccios, creativity in the kitchen is within reach. Our chefs got to work with them!

Ingredients

Kewpie mayonnaise
Mizuna lettuce
Dashi no moto bouillon
Prawn carpaccio
Grapefruit
Thai herb oil
Nori BBQ snacks
Blood orange
Chili
Zori cress

Preparation

  1. Defrost the prawn carpaccio and cut segments from the blood orange.
  2. Mix the slices with oil and salt and pepper to taste.
  3. Mix dashi with Kewpie mayonnaise.
  4. Grate blood orange into the mayonnaise.
  5. Halve the nori chips and prepare three chips per snack.
  6. Pipe mayonnaise onto two of the three chips and cover these two with prawn carpaccio.
  7. Pipe a little more mayonnaise on top.
  8. Stack them like a sandwich and arrange some lettuce in between.
  9. Now cover them with the third chip and pipe some mayonnaise on top.
  10. Top with zori cress and blood orange.
  11. Serve with a little chili.
