Seaweed and soybean sauce

Delicious with a fish dish featuring, among others, gurnard, lobster, and prawn.

Ingredients

1.5lPoultry stock
1Algae powder
200gWakame salad
200gsoybeans
Ponzu
Sesame oil

Preparation

  1. Cook the soybeans in water with salt until done.
  2. Put the cooked beans with the wakame salad in a blender, add the broth, and blend finely.
  3. Add the algae powder and blend until a nice green sauce forms.
  4. Strain and season with a little ponzu and a few drops of sesame oil.
