Sorbet 'Spanish Sun'

Sorbets are a delicious addition to your menu, but could use a modern twist... Like this Spanish version with blood orange.

Ingredients

various melons
apples
blood orange sorbet
cocktail foam sangria
churros
Sangria

Preparation

  1. Cut various melons and apples into pieces. Put the fruit in a vacuum bag and pour in a splash of sangria. Vacuum seal so the sangria infuses into the fruit. Place this fruit at the bottom of the sorbet glass.
  2. Fry the churros in oil and dust with powdered sugar.
  3. Scoop balls of sorbet and place them on the fruit in the sorbet glass. Pipe sangria foam on top. Garnish with the churros.
