
Sorbet 'Spanish Sun'
Sorbets are a delicious addition to your menu, but could use a modern twist... Like this Spanish version with blood orange.Ingredients
various melons
apples
blood orange sorbet
cocktail foam sangria
churros

Preparation
- Cut various melons and apples into pieces. Put the fruit in a vacuum bag and pour in a splash of sangria. Vacuum seal so the sangria infuses into the fruit. Place this fruit at the bottom of the sorbet glass.
- Fry the churros in oil and dust with powdered sugar.
- Scoop balls of sorbet and place them on the fruit in the sorbet glass. Pipe sangria foam on top. Garnish with the churros.
