Sushi of black quinoa

This dish consists of sushi made with black quinoa, avocado, and pulled mushrooms. We serve this stylish dish as an amuse-bouche or vegetarian snack.Serve with Kewpie mayonnaise and a slice of avocado.

Preparation

  1. Cook the black quinoa with salt and let it cool, but not in the refrigerator.
  2. Cut the avocado into pieces and sprinkle with lime juice.
  3. Mix the black quinoa with the crème fraîche.
  4. Place the quinoa in the center of the nori sheet and spread evenly, leaving a 1 cm border.
  5. Place the avocado and pulled mushroom on the black quinoa.
  6. Roll the sushi using a sushi mat.
  7. Cut into pieces and serve immediately.
