Nigiri sushi with smoked beets

This recipe was developed in collaboration with Knorr Professional and is suitable for 10 people.

Ingredients

400gSushi rice
10gWasabi
75gpickled ginger
sushi rice vinegar
10gRoasted sesame seeds
1units.itemscontainer of wood sorrel
15units.itemsmini beets
10units.itemsnasturtium flowers
50gHellmann's Real Mayonnaise
0.5Hellmann's Sesame Soy Vinaigrette
dark aged soy sauce

Preparation

  1. Wash the rice and cook it with 6 dl of water for 20 minutes.
  2. Spoon the rice onto a tray, generously sprinkle with sushi rice vinegar, and let it cool completely.
  3. Shape 30 pieces of sushi by hand.
  4. Cook the beets in water with a little salt for about 20 minutes.
  5. Clean the beets and smoke them gently for about 10 minutes in a smoker.
  6. Slice them into thin slices.
  7. Mix the wasabi with the mayonnaise.
  8. Put the wasabi mayonnaise in a piping bag.
  9. Top the sushi with slices of pickled ginger.
  10. Pipe some wasabi mayonnaise on top and add the sliced beets.
  11. Garnish with nasturtium and wood sorrel.
  12. Stir some dark soy sauce into the vinaigrette and drizzle over the plates.
  13. Place the nigiri sushi on top and finish with toasted sesame seeds.
