Tartelette with vegetarian roti, yardlong beans and Madame Jeanette mayonnaise

This amuse-bouche was created by Tom Lamers, chef of Het Koetshuis and member of the Culinary Team The Netherlands.

This dish consists of:

  • Tartelette
  • Madame Jeanette mayonnaise
  • Yardlong beans & sweet and sour onions
  • Vegetarian roti

Ingredients

Wonton wrappers
ras el hanout oil

basic mayonnaise
Madame Jeanette paste

yardlong beans
Pickled onions

1units.itemsFinely chopped shallot
1units.itemsHard-boiled egg
3Crème fraîche
Salt
1Garam masala
Lime zest
Pepper

Preparation

  1. Brush the wonton wrappers with oil.
  2. Cut out the wrappers and press them between two tartelette molds.
  3. Bake for 10 minutes at 160°C.

  1. Mix to taste.

  1. Finely chop the yardlong beans and blanch in salted water.
  2. Finely chop the pearl onions and pickle them. Then briefly torch with a blowtorch.

  1. Sauté the potato, shallot, and masala spices in a little oil.
  2. Add the crème fraîche and cook until done.
  3. Let cool and season with pepper, salt, and lime zest.
  4. Add chopped egg.
