
Tartelette with vegetarian roti, yardlong beans and Madame Jeanette mayonnaise
This amuse-bouche was created by Tom Lamers, chef of Het Koetshuis and member of the Culinary Team The Netherlands.This dish consists of:
- Tartelette
- Madame Jeanette mayonnaise
- Yardlong beans & sweet and sour onions
- Vegetarian roti
Ingredients
Wonton wrappers
ras el hanout oil
basic mayonnaise
Madame Jeanette paste
yardlong beans
Pickled onions

3Crème fraîche
Salt
1Garam masala
Lime zest
Pepper
Preparation
- Brush the wonton wrappers with oil.
- Cut out the wrappers and press them between two tartelette molds.
- Bake for 10 minutes at 160°C.
- Mix to taste.
- Finely chop the yardlong beans and blanch in salted water.
- Finely chop the pearl onions and pickle them. Then briefly torch with a blowtorch.
- Sauté the potato, shallot, and masala spices in a little oil.
- Add the crème fraîche and cook until done.
- Let cool and season with pepper, salt, and lime zest.
- Add chopped egg.
