Tempura from the siphon.Ingredients
Vodka
equal parts flour and rice flour
siphon with gas cartridges
Salt or spices to taste
Preparation
- Put the flour and rice flour in a food processor. While blending, add enough vodka until you have a batter that is just a bit thinner than yogurt.
- Season to taste with salt and spices and blend briefly.
- Strain the cream with the preserved lemon. Add the vinegar powder.
- Store chilled and use per portion.
