Tempura from the siphon

Tempura from the siphon.

Ingredients

Vodka
equal parts flour and rice flour
siphon with gas cartridges
Salt or spices to taste

Preparation

  1. Put the flour and rice flour in a food processor. While blending, add enough vodka until you have a batter that is just a bit thinner than yogurt.
  2. Season to taste with salt and spices and blend briefly.
  3. Strain the cream with the preserved lemon. Add the vinegar powder.
  4. Store chilled and use per portion.
