
Tomato jam
A spicy, sweet and tangy tomato jam with ginger, lemon and baharat. Delicious with cheese, meat or as a flavour enhancer on bread.Ingredients
500gfresh tomatoes
200gCane sugar
1freshly chopped ginger
1Smoked paprika powder
2Lemon juice
Tabasco
2Baharat
Preparation
- Pulse 500 grams of fresh tomatoes into a coarse pulp in a blender.
- Put this in a pan with 200 grams of cane sugar, 1 teaspoon of freshly chopped ginger, 2 teaspoons of lemon juice, 1 teaspoon of smoked paprika powder, 2 teaspoons of baharat, and a few drops of Tabasco.
- Let this boil vigorously for 2 minutes, then lower the heat and let it simmer for about 30 minutes until it becomes jam. Do not strain.
