Vegetarian burger with sautéed mushrooms

Vegetarian burger with Raw NoBeef Burgers from De Vegetarische Slager, sautéed mushrooms, apple-fennel salad, and truffle sauce.

Ingredients for 10 people.

30gClarified butter
400gmixed mushrooms

4gThyme
300gwhite sweet onions
125gFennel
Salt
Pepper
1gGranny Smith apple
125gHellmann's Vegan Mayo
5units.itemsnut oil
10units.itemshamburger bun
15gSunflower oil
100goak leaf lettuce
50gAged cheese

Preparation

  1. Preferably cook the burgers thawed in clarified butter to the desired doneness.
  2. Clean the mushrooms and white onions and cut them into strips.
  3. Heat the oil and sauté the onions with the thyme, seasoning with salt and pepper.
  4. Cook the onions over moderate heat and let them lightly caramelize.
  5. Briefly fry the mushrooms over high heat and season them with salt and pepper.
  6. Slice the apple and fennel into paper-thin slices using a mandoline.
  7. Mix the vegan mayo with the truffle tapenade and the nut oil.
  8. Halve the hamburger buns and briefly place them on the grill or griddle.
  9. Top the buns with the truffle sauce, oak leaf lettuce, burger, and then the sautéed onions and mushrooms.
  10. Finish the burger with the apple-fennel salad and finally grate some aged cheese over the top.
