
Waffle with Lady’s Blue and grated fig

Preparation
- Place a few figs in the freezer and a few in the fridge.
- Prepare the waffle batter according to the instructions on the package.
- Bake the waffles in a waffle iron.
- Break the waffles into pieces and place on the plate.
- Put the fig puree and sugar in a measuring jug, add the emulbinder, and blend smooth using a hand blender.
- Pipe the fig jelly between the waffles.
- Break the cheese into pieces and place on the waffles.
- Cut the figs from the fridge into wedges and place between the different cheeses.
- Grate the frozen fig with a fine microplane grater over the cheese at the table.
