Yorkies & Mash

Light, crispy, and deliciously savory. Yorkshire puddings filled with creamy mashed potatoes, flavored with herb butter.

Before serving, rubbed with herb butter, briefly in the oven, and topped with cottage cheese and chives. Recipe for about 6 to 8 yorkies.

Ingredients

Salt
105mlWater
6Eggs (M)
250gFlour
150mlMilk

Mashed potatoes
Butter
herb butter herbs

Chives
Herb butter
Cottage cheese

Preparation

  1. Mix everything into a smooth batter and let it rest for at least 10 minutes.

  1. Make the mashed potatoes creamy with melted butter and herb butter spices.
  2. Let the mash cool and form into small balls.

  1. Fill a muffin tin with a layer of neutral oil and place it in the oven at 200°C to get it very hot.
  2. Carefully remove the tin from the oven and pour the batter into the hot oil, filling each cup about halfway.
  3. Place a ball of mashed potatoes in each cup and return the tin to the oven.
  4. Bake for about 25 minutes, until the puddings have risen nicely and are golden brown.
  5. Remove from the oven and further fill the cups with extra mashed potatoes so they are well filled.
  6. Brush with melted herb butter and heat again at 180°C.
  7. Serve with a dollop of cottage cheese (40141686) and fresh chives.
