
Sweet potato, pimentón, sriracha & coriander
This dish consists of: Sweet potato fries, coriander oil, and sriracha yogurt sauce.Ingredients
mild pimentón powder
2corn oil
black pepper from the mill
2sweet potatoes
Garlic powder
1Garlic clove
6spinach leaves
100gOlive oil
50gFresh coriander
Sriracha mayonnaise
Yogurt
Preparation
- Peel the potatoes and cut them into fries.
- Mix the cornstarch with garlic powder, pepper, and pimentón.
- Toss the potatoes in the mixture so the powder coats them well.
- Add the oil and mix everything thoroughly.
- Roast the fries in the oven for about 15 minutes at 200°C, turning them halfway through.
- Blend the coriander, spinach, garlic, and olive oil, then strain the mixture.
- Mix the sriracha mayonnaise with the yogurt.
Serve the fries with the sriracha yogurt sauce and coriander oil.
