That Hefeweissbier (hefe=yeast, weizen=wheat) has nothing to do with the color white is proven by this Dunkel from Weihenstephan. As with all dark beers, the color is the direct result of drying the germinated grains at a higher temperature. This causes the sugars to ferment slightly and caramelize. The result is a beer with many fruity flavors and a little bit of clove. The same creamy freshness of Hefeweissbier is preserved, by the way!
