In Tuscany, shepherds used to gather edible vegetables and herbs they could find while herding the animals. They would fry these in good olive oil, then water was added to create a hearty soup. Our minestrone soup is inspired by this old recipe.
Usage: dilute this soup to taste with a maximum of half a jar of water and heat. It can also be eaten undiluted as a vegetable stew with rice or pasta.
