The Vincotto wine vinegar with figs is a special type of vinegar. It is made from two different grape varieties: the Negroamaro and the black Malvasia. They are cooked down to one-fifth of the volume. After this, the syrup is poured into oak barrels, along with the vinegar. Then the vinegar must mature for no less than four years. After these four years, figs are added. After six months of aging, a delicious mix of original Vincotto and figs is created. During the process, no colorings or preservatives are added. This gives the product a sweet and velvety taste. This vinegar adds depth to dishes with meat and vegetables, but also gives a nice twist to dressings and sauces.
