Capers are the unopened flower buds of the caper plant. This is a low, wide shrub with branches with thorns. The plant produces beautiful white flowers that are followed by berries with kidney-shaped seeds. The caper plant is cultivated in countries with a Mediterranean climate, such as in France, Spain, and Italy, but also in Western Asia. Ideal for use in salads or to be processed in dishes like steak tartare. When the flower is fertilized, a berry is formed. This berry can also be pickled and is known as the caperberry or caper apple. It tastes deliciously fresh as an appetizer snack, or as decoration with, for example, carpaccio or vitello tonnato.
