The beef striploin, also known as sirloin or entrecote (when portioned), is a tender cut of meat with a beautiful fat cap on top that provides plenty of flavor. It comes from the back of the cow. Portion the piece to obtain beautiful entrecotes or cook the striploin as a whole.
