The beef striploin, also known as the sirloin or entrecote (portioned), is a tender piece of meat with a nice fat edge on top that provides a lot of flavor. It comes from the back of the cattle. With this meat, the bone is still present. Briefly cook the striploin to serve it nicely pink.
