This beef neck comes from grain-fed Black Angus cattle from Australia. The cattle graze for 26 months on vast plains, after which they are housed in a feedlot for at least 120 days. The cows have a carefully composed diet mainly consisting of grain, supplemented with grass and corn. This diet results in the marbling of the meat. This marbling contributes to the beautiful structure, taste, and tenderness of the meat. It is recognizable by the fine fat lines running through the meat, a perfect juiciness, and fine texture.
