Livar pigs from Limburg are on par with the best free-range pigs from Spain or Italy. The unique interplay of a blend of grains, unique breeds, and roaming outdoors makes Livar meat a special product. Van der Zee processes Livar, among other things, into dried sausages such as a Livarano, smoked pork belly, or a Burgundian ham. The cold cuts are made from ripe and marbled pork. The fat gives the Livar cold cuts a natural and full flavor. Traditional pork quickly loses 25% of its weight during preparation, while with Livar meat this is only 8%. This keeps the meat juicy and tender.
