The coquelette is a beautiful piece of meat to prepare on the spit. Season the meat before cooking with a nice red or green dry rub. Then cook the meat directly, with the barbecue at a temperature of 180°C. For the coquelettes, measure the core temperature between the thighs. Cook the meat until it has reached a temperature of 72°C. Depending on the size of the coquelette, cooking takes about half an hour.
