Flat oysters are only ready for consumption after five to six years and are therefore rarer than the creuse oysters. The oysters have a refined and delicate taste. The size is indicated with zeros, the more zeros the larger the oyster. These premier flat oysters come from the Grevelingenmeer in the Netherlands or the Limfjord in Denmark.
