This cheese is made from fresh raw milk from Old Dutch MRIJ cows. These cows graze at the foot of the Grebbeberg in the Gelderse Vallei. The milk is tied to the cattle farmer and therefore not mixed with milk from other cattle farmers. MRIJ stands for Maas-Rijn-IJssel cattle. The cheese has a beautifully balanced taste, tailored to the right ripening for raw milk cheese. The cheese is naturally ripened for at least 12 weeks. The rind of this cheese is not edible.
