Intense in flavor, from Northern France, aged between 18 and 24 months, with a firm texture and a nutty aroma. Has the appearance of a lunar landscape, this is due to the cheese mite that eats the cheese during maturation, sounds strange but a requirement to make this cheese. Traditionally an Edam, colored with the natural dye annatto.
