This mild Sicilian sheep cheese is subtly flavored with olives. Pecorino is a cheese with many varieties. The spicy salty Romano is dry and more suitable for grating, and for example, the Sardo is an artisanal pecorino from Sardinia that is perfect for a cheese platter. One thing pecorinos have in common, they are all made from sheep's milk and owe their name to it (pecora = sheep).
