The Greek feta made from sheep's milk and a maximum of 30% goat's milk is one of the oldest cheeses in the world. This type of cheese has been produced in and around Greece for thousands of years. The name feta was mainly known in Europe as the salty white cheese made from cow's milk, primarily from Denmark, and totally different in taste and texture from Greek feta. Since 2002, however, the name Feta has been protected and only the original Greek cheese may bear this name, while other countries have since mostly used the name white or salad cheese. Delicious pure on a traditional Greek salad, crumbled for gratinating or briefly frying (saganaki).
