By allowing this mixture to ferment, lactic and acetic acids are formed. This ensures a natural rising of the bread. Due to the long rising time, vitamins and minerals are better absorbed, resulting in a nutritious bread with a lot of aroma and flavor. Each sourdough is finally processed by hand.
