For the Golden Croissant, Pastridor went back to basics. A croissant consists of different layers of butter and dough stacked on top of each other. This dough is cut into a triangle. To achieve the perfect honeycomb structure, Pastridor made the dough triangle longer and thinner. This results in less tension on the layers of dough and butter when rolling out, keeping them beautifully intact. The croissant thus becomes super crispy and airy. And in combination with 23% butter, that's 100% indulgence!
