Based on regular harvests from food forests, Van der Staak developed the plant-based cooking style and kitchen philosophy known as ‘botanical gastronomy’. In his restaurant, he demonstrates daily that cooking with plants does not have to be a modest cuisine. On the contrary: food forests provide us with a wealth of new products. He uses new as well as traditional techniques such as fermentation.
In Plant, he shares his knowledge and a collection of more than eighty plant-based recipes, because his botanical gastronomy is not intended as just another cooking trend, but as a new way of thinking about food, where with every bite we make the earth a little more beautiful and better.
