This couverture melting pot is a professional warmer for chocolate and couverture. The couverture melting pot can heat up to 60 degrees and has a capacity of 1.8 liters. Set the maximum temperature on the device and melt 70% of the chocolate while stirring. Once the chocolate is completely melted and has reached a temperature of about 40-45 °C, turn the thermostat back to 30°C lower and add the rest of the chocolate (at room temperature). Then stir this well to cool the chocolate to the temperature recommended by the chocolate manufacturer. The temperature will be approximately 31°C for dark chocolate, 30°C for milk chocolate, and 29°C for white chocolate. For measuring the precise temperature, the use of a thermometer is recommended. The couverture melting pot is suitable for melting chocolate and keeping the pre-crystallized chocolate at the ideal temperature during processing.
