Jonnie Boer, chef of the restaurant De Librije in Zwolle, had dreamed for years of creating the ultimate Dutch gin of his own. A sublime genever. Revenge became the result of a long quest for the perfect balance between the bitter and sharp flavors of genever and the additions of botanicals and spices collected from around the world. This led to a fantastic macerate based on kaffir lime and orange for the right acidity. Added to this is an ingenious touch of lemon marigold and peppers for sharpness, and for depth and complexity, the flavors of bay leaf and cinnamon, rounded off with a beautiful sweet bite of star anise. Genever is the perfect anagram of Revenge, and that is no coincidence. The whole world drinks gin and thinks of England. But the method for making gin was shamelessly stolen from the Dutch.

Gin comes from the English word "ginnever," and you can guess what that means: genever, of course! Today, chef Jonnie Boer strikes back with his botanically enriched genever that puts English gins to shame. Because the ultimate revenge of Holland on the English for this cheap theft is simple: developing the most delicious spirit ever to pass our lips. Revenge is a botanical spirit that gives new meaning to the word genever. Or shall we say gin? To be fair: the alchemists developed the distillation of grain for making medicines. With the addition of juniper berries and refinement of the distillation process, the Dutch in the early 17th century created an exceptionally beautiful and tasty product. A product that would conquer the world. The Dutch spirit was made famous worldwide through the VOC. The English first called it Dutch Courage, which later became ginnever and eventually gin. Naturally, they soon started distilling themselves. Over the centuries, gin developed into an incredibly popular drink that is now served in every bar and restaurant around the world. From today, we are taking back what is ours. And of course, the English can't compete with this. This is our Revenge!
