Pisco is distilled from grapes, unlike the South American spirits tequila and mezcal. The Peruvian Intipalka, with vineyards in Ica at the foot of the Andes River, produces pisco with an exceptionally sweet smoothness. The hand-harvested grapes are fermented in stainless steel tanks, and from this fermented grape juice, the pisco is ultimately distilled. Delicious when used in the cocktail Pisco Sour.
