A trend in the whisky world: cask finishes. Or the maturation of whisky in a second cask for extra flavor and complexity. Maturation in a sherry cask, for example, results in notes of dried fruit, cinnamon, and nutmeg in a whisky. But besides sherry casks, wine, port, rum, and mezcal casks also provide special flavors and complexities.
The Tomintoul distillery, led by Robert Fleming, is located north of the village of the same name in the Glenlivet region. As part of the Cairngorms National Park in the heart of Speyside, the natural environment and pure air contribute to the quality and taste of the whiskies. Whiskies with a soft, round character with refined wood tones. Robert Fleming has bottled a number of small batch whiskies, where Tomintoul whiskies are first matured in ex-bourbon American oak. Subsequently, the whiskies are finished in pinot noir wine casks from Burgundy, white port casks from Portugal, and merlot wine casks from Bordeaux. A must try!
