The Delas Domaine des Tourettes wine pairs excellently with red meat, game, marinated meat, and spicy stews. The grapes for this wine are hand-harvested plot by plot at the optimal point of ripeness. The fermentation is traditional and takes place in open concrete tanks at a temperature of 28 - 30°C and lasts about 20 days. After pressing, the wine is transferred to oak barrels. This results in a powerful, complex wine with black currants, smoke, spices, leather, and black olives.
