The production of Aszú wine (wine of tears) is a meticulous process that requires great patience and extensive know-how. It is only possible in good harvest years, when nature provides rain at the end of summer and sun and wind in early autumn—the essential conditions for the development of noble berries. The berries swell from the humidity, and "Botrytis cinérea" settles on the skin, causing noble rot.
The same formulas are used for the wine as have been used for hundreds of years.
To the must in a Gönc barrel, which is 136 liters, 3, 5, or 6 baskets of 23 kg ("puttony" in Hungarian) of Aszú berries are added. The Aszú berries are soaked with the must, and after waiting a day or two for the berries to swell, they are pressed.
Fermentation of the Aszú must is a slow process that can sometimes take up to two months. The must is then placed in wooden barrels and stored in a protected wine cellar, waiting for fermentation to stop naturally. A small amount of Eszencia, collected drop by drop from the Aszú berries, is then added. In this way, the soul of the wine, embodied in the Eszencia, is symbolically returned.
