Capers are the unopened flower buds of the caper plant. This is a low, wide shrub with branches with thorns. The plant produces beautiful white flowers followed by berries with kidney-shaped seeds. The caper plant is cultivated in countries with a Mediterranean climate, such as in France, Spain, and Italy, but also in Western Asia. Ideal for use in salads or in dishes like steak tartare. Because the capers are preserved in sea salt, the flavor is well preserved, and they are slightly crunchier than capers in oil.
