What is it: product based on vegetable fat and milk protein. Stabilizer for cold foams (fred = cold) in preparation tip with a siphon. Dissolves cold in a mass (use a hand blender). Neutral in taste.
Dosage: 50-100 grams per 1 kilo, depending on the presence of fat in the mass. Fat already helps foams remain more stable, so more pro espuma is needed in 100% fruit juice than in fruit juice with a dash of cream.
