500mlWhipped cream
500mlWhole milk
10gFine sea salt
80gSushi vinegar
15gPro espuma
30gNduja

Preparation
- Brush the Pane Carasau with basil oil.
- Toast at 180°C.
- Bring the cream, milk, nduja, salt, and sushi vinegar to a boil.
- Blend with an immersion blender and strain the mixture.
- Add the pro espuma with an immersion blender and mix well (sieve again if necessary to be sure).
- Pour into a 1-liter siphon.
- Charge with 2 cartridges for service.
- Break the pane carasau into pieces.
- Pipe some of the nduja foam into a small bowl.
- Drizzle some basil oil over it.
- Garnish with crispy grains.
