Cold-soluble, animal gelatin mixed with maltodextrin, also known as 'fast gelling agent'. Does not need to be soaked or heated, is directly soluble in liquid. Sets completely after 30 minutes. Dishes made with instant gel can be frozen well.
Base: 5-6 grams for 1 sheet of 2 grams.
Tip: After 30 minutes, slightly freeze or slightly grease the silicone mold beforehand to better unmold. When frozen, the mass can be cut well.
