Airy raspberry sphere

A light ball bursting with flavor.

Ingredients

35ginstant gel
400graspberry puree (Boiron)
25gLemon juice
100gSugar syrup

Preparation

  1. Using a hand blender, mix 400 grams raspberry purée (Boiron), 100 grams sugar syrup, 25 grams lemon juice, and 35 grams instant gel.
  2. Place this in the fridge and let it set slightly (about 10 minutes). Then, using a stand mixer with a whisk, whip until completely airy. Using a piping bag, pipe into silicone molds and chill well for at least 30 minutes.
  3. After 30 minutes, freeze slightly or grease the silicone mold beforehand to unmold more easily. When frozen, the mixture can be cut easily.
