Rolls of beetroot and horseradish

Beautiful rolls bursting with flavor!

Ingredients

500gBeet juice
Ginger syrup
40gvegetal
500gCream
Horseradish

Preparation

  1. Season 500 grams of beet juice with a little ginger syrup.
  2. Add 20 grams of vegetal and bring to a boil while stirring.
  3. Let the air bubbles disappear, then pour out thinly onto a tray and let cool.
  4. Season 500 grams of cream with horseradish (to taste) and salt.
  5. Bring this to a boil with 20 grams of vegetal, let cool (keep it still liquid), and then carefully pour thinly over the beet gelée.
  6. Roll this up together and cut to size.
