Preparation
- Mix (cold) 220 grams of bergamot purée (Boiron) with 120 grams of sugar syrup, 4 grams of citras, and 3.2 grams of agar.
- Bring to a boil while stirring and then let cool to form a gel.
- Blend the gel in a food processor or blender until smooth
