Citrus fluid gel

What is citras? Citras is not a gelling agent, but reduces the acidity in products (adjustment of the pH value).

Ingredients

120gSugar syrup
3.2gAgar
220gbergamot purée (Boiron)
4gCitras

Preparation

  1. Mix (cold) 220 grams of bergamot purée (Boiron) with 120 grams of sugar syrup, 4 grams of citras, and 3.2 grams of agar.
  2. Bring to a boil while stirring and then let cool to form a gel.
  3. Blend the gel in a food processor or blender until smooth
