Palatinose is half as sweet as crystal sugar. In nature, palatinose is found in honey and sugarcane. Palatinose does not dissolve well in liquid, but is very stable during processing. For a sweetener, palatinose provides few calories. The application possibilities are enormous; from bread to cereal bars and candy and from ice cream to drinks.
