Verjus is the French word for green juice, made from the first green grapes. The juice is still green and thus acquires a delicious, pleasantly fresh sour taste with notes of Granny Smith and citrus. Delicious in a dressing, as a flavor enhancer in a mayonnaise or a butter sauce. But honestly? We also like to mix it in our cocktails.
