
Asparagus in basil batter
Basil goes surprisingly well with white asparagus.Ingredients
1bunch of basil
carbonated water
White asparagus
1pack of tempura flour
Preparation
- Make the basil batter in the food processor from 1 bunch of basil (leaves only) and 1 pack of tempura flour. While mixing, add just enough sparkling water until a nice frying batter forms (slightly thinner than yogurt is perfect).
- Season the batter with salt.
- Peel fresh white asparagus and cook in salted water. Pat them dry.
- Cut the asparagus lengthwise (but not all the way through) and dip in the batter.
- Fry in oil at 180°C and serve immediately.
