BBQ pineapple marinated in rum

Pineapple marinated in rum, cooked on the BBQ and gratinated with coconut and cane sugar. Combined with cocoa and yuzu cocktail foam and a coconut crisp.

Ingredients

1Pineapple
100mlDark rum
100gCane sugar
2units.itemsStar anise
1Cinnamon stick
cocktail foam cacao & yuzu
1crispy coconut
Atsina cress
50gdesiccated coconut

Preparation

  1. Clean the pineapple.
  2. Put the dark rum and cane sugar in a pan and cook until the sugar is dissolved. Then add the star anise and cinnamon stick.
  3. Let this cool down.
  4. Put the pineapple together with the dark rum in a vacuum bag. (1 day in the fridge).
  5. Remove the pineapple from the vacuum bag and save the rum marinade.
  6. Boil down the marinade until it becomes a rum caramel sauce.
  7. Cook the pineapple on the barbecue.
  8. Cut the pineapple to the desired thickness.
  9. Sprinkle the pineapple with coconut and cane sugar and gratinate under the WeGrill.
  10. Garnish the pineapple with the cocktail foam, coconut crisp, and atsina cress.
