
Preparation lomo de tira on the BBQ
Lomo de Tira is a delicious entrecote from the Ibérico pig, which is cut lengthwise. Due to its shape, Lomo de Tira is ideal for preparing on the barbecue and serving sliced.The cutting direction and the fat ensure ultimate tenderness.
Barbecue setting: barbecue temperature at 200°C with cast iron grid for about 12 to 15 minutes (core temperature 62°C).

Preparation
- Sprinkle the meat with some pepper and salt.
- Grill on both sides for a total of about 12 to 15 minutes (core temperature 62°C), for a nice roasting on the meat.
- Then wrap the meat in aluminum foil and let it rest for at least 10 minutes.
- Serve the Lomo de Tira nicely pink, that's when it tastes best.
Tip: Also place the Lomo de Tira on its side in the pan to render the fat… delicious!
