Ingredients

Beyond Sausage
Chestnut mushrooms
Salt and pepper
Winter carrot
Egg
Sea salt

Preparation

  1. Place the chestnut mushrooms in a food processor and pulse briefly, making sure they are not too finely chopped.
  2. Sauté the chestnut mushrooms over low heat in olive oil until all the moisture has evaporated. Season with salt and pepper and set aside to cool.
  3. Peel the winter carrot and slice into thin strips using a mandoline, then fry the Beyond Sausage in olive oil.
  4. Lay a piece of foil on the work surface and arrange the slices of winter carrot on top.
  5. Spread the mushroom duxelles over the carrot, place the Beyond Sausage on top, and roll up tightly.
  6. Place a sheet of puff pastry on foil on the work surface and put the roll with carrot, mushrooms, and Beyond Sausage on top.
  7. Roll the puff pastry up tightly and place on a baking tray. Brush the roll with egg and sprinkle a little coarse sea salt on top.
  8. Bake in a preheated oven at 180°C.
